Nacho Queso Supreme Fritters, which I paired with two dipping sauces: a slightly spiced Tomato Jam that is sticky sweet but balancing with the spices I added such as ginger, cloves, and cinnamon, and an Herb Aioli that’s lusciously creamy thanks to sour cream and avocado, with an herbaceous punch from the parsley and cilantro. The most perfect dipping sauces for a cheesy, crispy fritter you’re going to love!

But then again, what is time? It has lost its concept completely in 2020, and days become weeks and weeks become months and here we are, a week or so away from 2021.

Food has been the way I've kept sane this year, and today's recipe is a simple one - a trend you've been seeing in my latest recipes. I don't have the energy to dive into complicated recipes lately, and I know I'm not alone. It's no longer March, when we all wanted to make sourdough bread and learn new cooking techniques. It's December and we are continuing to survive, and for me to survive, I need bread in all shapes and forms, thus this recipe for Winter Squash Toast was born.

I think not, and thus today I am bringing you not only this recipe, but a few tips and tricks I have found to be key throughout the years in making these. Because yes, I've been making them for years - at home for dinner parties and even weeknight treats, as well as in the restaurant, for catered events and the appetizer menu specials. They are simple, pack a ton of flavor, and everyone that tastes them wants more.

Because with these three things, I can also make a quick dish for lunch or dinner, like this Tomato Mozzarella Galette with Basil Flecked Crust. Yes, I did say BASIL FLECKED Crust. It's so fresh and delicious, the tomatoes being roasted beforehand so the galette is pristine and not too wet after baking it. Grab some fresh mozzarella and you're set!
